Spinach and Feta Air Fryer Stuffed Chicken

Ingredients:

For the Chicken:

  • 1 chicken breast fillet

  • 40g fresh spinach (or use frozen spinach, thawed and drained)

  • 1 tsp olive oil

  • 30g feta cheese, crumbled

  • ½ tsp milk (of your choice)

  • ¼ tsp garlic granules

  • ¼ tsp dried basil

  • Freshly ground black pepper, to taste

For the Air Fryer Potatoes:

  • 180g baby potatoes, quartered

  • 1 tsp olive oil

  • ¼ tsp garlic granules

  • ¼ tsp dried parsley

  • ¼ tsp paprika (optional)

  • Freshly ground black pepper, to taste

To Serve:

  • Side salad or vegetables of your choice

Instructions:

  1. Preheat the air fryer to 180°C (350°F).

  2. Cut a pocket into the side of the chicken breast (be careful not to cut all the way through).

  3. Wilt the spinach by sautéing it in a pan with a little olive oil for 2-3 minutes, then chop it finely. If using frozen spinach, ensure it’s fully drained.

  4. Add the spinach to a small bowl with the feta, milk, garlic granules, basil and season with black pepper.

  5. Stuff the chicken with crumbled feta cheese and spinach mixture. Secure the opening with toothpicks or kitchen twine to keep the filling inside.

  6. Brush the chicken with olive oil and season with freshly ground black pepper.

  7. In a bowl, toss the potatoes with olive oil, garlic granules, parsley, paprika, and black pepper.

  8. Place the stuffed chicken breast in the air fryer basket. Arrange the seasoned potatoes around the chicken, ensuring they are in a single layer for even cooking.

  9. Air fry at 180°C (350°F) for 15-20 minutes, flipping the chicken halfway through the cooking time and shaking the potatoes.

  10. Once everything is cooked, remove the toothpicks or twine from the chicken.

  11. Serve with a side salad or vegetable of your choice.

    Top Tip: If using a standard oven, preheat to 190°C (375°F) and cook for 25-30 minutes or until the chicken is cooked.
