Satay Chicken Meatballs 

Ingredients:

For the meatballs:

  • 100g chicken mince

  • ½ small spring onion, finely chopped

  • ½ garlic clove, crushed

  • ¼ tsp ginger paste

  • 1 tsp fresh coriander leaves, chopped (or ½ tsp fried coriander)

  • A pinch of red pepper flakes (optional)

  • ½ tsp soy sauce

  • ½ egg, beaten

  • 15g panko breadcrumbs (about 1 heaped tbsp)

  • ½ tsp olive oil

    Top Tip: In a rush - you can also use 4-5 shop-bought chicken meatballs. 

For the satay sauce:

  • ½ tsp olive oil

  • ½ garlic clove, crushed

  • ¼ tsp ginger, crushed

  • ½ tsp chilli sauce (not sweet chilli)

  • 1 tbsp smooth peanut butter

  • ½ tbsp soy sauce (reduced sodium)

  • 1 tsp freshly squeezed lime juice

  • 1 tsp curry powder

  • ½ tsp clear honey

  • 90ml full-fat canned coconut milk

To serve:

  • 60g brown rice

  • 70g broccoli, cut into florets

  • ½ tbsp sesame seeds

Instructions:

  1. In a bowl, mix the chicken mince, spring onion, garlic, ginger paste, coriander, red pepper flakes, soy sauce, beaten egg, and panko breadcrumbs. Shape the mixture into 4-5 small meatballs. Set in the fridge for 5 minutes to firm up.

  2. Heat a non-stick pan over medium heat with ½ tsp olive oil. Add the meatballs and cook for 5-7 minutes, turning occasionally, until browned all over. Remove and set aside.

  3. In the same pan, make the sauce. Sauté the garlic and ginger for 1-2 minutes until fragrant.

  4. Add the chilli sauce, peanut butter, soy sauce, lime juice, curry powder, and honey to the pan. Stir until a thick paste forms.

  5. Gradually stir in the coconut milk, mixing until smooth and creamy.

  6. Return the meatballs to the pan, spooning the sauce over them. Reduce the heat to low, cover, and simmer for 8-10 minutes, stirring occasionally, until cooked through. Taste test and add more seasoning if required.

  7. Meanwhile, cook the brown rice according to the packet instructions and cook the broccoli until tender.

  8. To serve, plate the rice, top with the meatballs and pour over the satay sauce. Add the broccoli to the side and sprinkle over the sesame seeds.

    Recipe Adjustments - 

    Want to make the recipe vegetarian?

    Replace mince with vegetarian mince or use plant-based meatballs, 100g firm tofu or any vegetarian alternative using the food swap list.
