Brunch Traybake
Ingredients:
2 sausages (pork, beef, chicken/turkey or veggie)
2 slices bacon (pork, turkey or veggie)
8 cherry tomatoes
50g mushrooms, sliced
70g courgette, sliced
1 tsp olive oil
1 tsp thyme
Black pepper for seasoning
Large handful of spinach leaves
2 eggs
30g feta cheese, crumbled
Instructions:
Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
Place the sausages and bacon slices on the tray.
In a bowl, toss the cherry tomatoes, mushrooms, and courgette slices with olive oil, thyme, and a pinch of black pepper. Spread them around the sausages and bacon.
Bake in the preheated oven for 15-20 minutes, or until the sausages and bacon start to brown and the vegetables are slightly tender.
Remove the tray from the oven. Add the spinach to one corner of the tray, creating a small bed. Crack the eggs directly onto the tray, making small wells if needed to keep them in place.
Return the tray to the oven and bake for another 8-10 minutes, or until the eggs are cooked to your liking and the spinach is wilted.
Once out of the oven, sprinkle the crumbled feta cheese over the vegetables and eggs. Serve immediately.
