Chicken and Sweetcorn Salad Bowl

Ingredients:

  • 1 tsp mayonnaise

  • 1 tbsp full-fat Greek yoghurt

  • ½ tsp Djoin mustard

  • ¼ tsp red wine vinegar (or apple cider vinegar)

  • Pinch of black pepper

  • Pinch of smoked paprika

  • 1 medium-sized chicken breast, cooked and shredded, approx. 125g

  • 2 tbsp sweetcorn

  • ½ yellow pepper, finely diced

  • 1 spring onion, finely sliced

  • 1 large handful of mixed greens (e.g., spinach, kale, or baby lettuce)

  • 6 cherry tomatoes, halved

  • ½ small carrot, grated

  • ½ tbsp pumpkin seeds or sunflower seeds

Instructions:

  1. In a large bowl, mix the mayonnaise, yoghurt, mustard, vinegar, black pepper and paprika until well combined.

  2. Add the chicken, sweetcorn, peppers and spring onion. Stir gently to combine.

  3. In a serving bowl, arrange the mixed greens, cherry tomatoes and grated carrot, leaving room for the chicken mixture.

  4. Add the chicken mixture to the bowl and sprinkle over the pumpkin seeds. 

  5. Serve and enjoy!

    Recipe Adjustments - 

    Want to make the recipe vegetarian? 

    Remove the chicken and add 70g of cubed pan-fried halloumi, 2 boiled eggs or any vegetarian alternative using the food swap list.
