Weekend Brunch (LC)

Ingredients

  • 2 sausages (chicken, pork, turkey or vegetarian)

  • 4 mushrooms

  • 4 cherry tomatoes

  • 2 eggs

  • ½ avocado

Instructions:

  1. Cook sausages as per instructions on the packet

  2. Grill the mushrooms and tomatoes.

  3. Slice the avocado.

  4. Poach the eggs (eggs can also be fried, scrambled, omelette or boiled) 

  5. Serve together and enjoy.

Recipe Adjustments

Want to remove the meat? Replace the meat sausages with 2 vegetarian sausages or any vegetarian alternative using the food swap list.
