Turkey Macaroni (HC)
Ingredients
60g Macaroni
½ tbsp olive oil
½ onion, medium, diced
½ red pepper, diced
½ tsp garlic powder or ½ garlic clove, crushed
100g turkey mince (or any mince)
Pinch of black pepper
¼ tsp oregano
¼ tsp basil
¼ tsp paprika
½ tsp tomato puree
½ tsp Worcestershire sauce
½ chicken stock cube (low sodium)
200g tinned tomatoes
3 tbsp peas, frozen
½ heaped tbsp cream cheese
Instructions:
Cook the macaroni according to the packet instructions.
Add olive oil to a large frying pan with the onion, peppers and garlic. Sauté for 5 minutes.
Add the mince and sauté until cooked through.
Season the turkey and vegetables with black pepper, oregano, basil, paprika, tomato puree, Worcestershire sauce and mix everything until well combined.
Add the stock cube to a small amount of hot water, mix until dissolved and add to the pan along with the tinned tomatoes and peas.
Bring to a boil then simmer on medium heat.
Once the pasta is cooked, drain and mix with the mince mixture.
Add the cream cheese cheese and mix well.
Once the cream cheese has melted, taste test and add more seasoning if necessary.
Serve and enjoy.
