Tex Mex Bowl (HC)
Ingredients
1 tsp olive oil
½ small onion
½ red pepper (bell pepper)
2 tbsp (1.5 Aus tbsp – 30ml) sweetcorn (whole kernel corn)
4 tbsp (3 Aus tbsp – 60ml) black beans
3 tbsp (2.25 Aus tbsp – 45ml) kidney beans
1 tsp cumin
1 tsp coriander (cilantro)
1 tsp paprika
½ avocado
1 medium tomato
6 pieces of jalapeno peppers in brine, rinsed
1 tbsp (0.75 Aus tbsp – 15ml) hummus
Instructions:
Preheat oven to 180°C / 350°F / Gas Mark 4.
In a pan add the olive oil, sliced onion and red pepper (bell pepper).
Allow to sauté for a few minutes.
Then add sweetcorn (whole kernel corn), black beans and red kidney beans. Season with cumin, coriander (cilantro) and paprika, mix around and heat through.
In a bowl mash the avocado, then add sliced tomato and mix around.
Now start to build your tex mex bowl, add the avocado mix, jalapeños and hummus.
Then add the bean mix to the bowl and serve.
