Stuffed Tuna Baked Potato (HC)

Ingredients

  • 1 medium baking potato (approx. 170g)

  • 1 small can of tuna, drained (approx. 70g)

  • 10g full-fat mayonnaise

  • 10g red pepper, finely diced

  • 10g yellow pepper, finely diced

  • ½ spring onion, finely sliced

  • 20g cheddar cheese, grated

  • ¼ tsp, freshly ground black pepper

  • Side salad of your choice

Instructions:

  1. Preheat the oven to 200°C.

  2. Pierce the potato using a fork several times then wrap it in tin foil, and bake for about 1 hour or until soft. Alternatively, place into the air fryer at 200°C for 45 minutes.

  3. Once the potato is cooked, remove foil and leave to cool. Slice it in half lengthways and scoop the flesh out into a bowl.

  4. Mash the potato, add the tuna, mayonnaise, peppers, spring onion and half of the cheese. Mix well and season with black pepper.

  5. Place the mixture back into the potato skins and sprinkle over the remaining cheese.

  6. Pop on a baking tray and back into the oven / air fryer until heated through and the cheese is melted on top, this should take 4-5 minutes.

  7. Serve with a side salad.

  8. Make ahead and store in the fridge for 5 days for an easy food prep.
