Spicy Baked Eggs (LC)
Ingredients
1 tsp olive oil
1 small onion, finely sliced
1 garlic clove, minced
1 tbsp dried thyme
2 peppers (any colour), deseeded and finely sliced
½-1 red chilli, finely sliced, or a pinch of crushed dried chilli flakes
65g baby leaf spinach
Black pepper to taste
4 eggs
50g feta, crumbled
Instructions:
Preheat the oven to 180-degrees fan.
Heat the olive oil in a large frying pan. Add the onion, garlic and thyme and cook over a medium heat for a few minutes.
Add the peppers and chilli and gently cook for 15 minutes until softened.
Take the pan off the heat and stir in the spinach to wilt and season with black pepper.
Divide the contents of the pan between two individual ovenproof dishes. Make two wells in each dish and break an egg into each. Crumble the feta on top and bake for 15 minutes or until the eggs are lightly set.
Top Tip
The recipe makes 2 portions. The remainder can be stored in an airtight container in the fridge for a few days and eaten cold or reheated in the oven.
