Slow Cooker Spanish Chicken (HC)

Ingredients

  • 4 chicken fillets, diced

  • 120g chorizo, diced

  • 200g brown rice

  • 400g cannellini beans, drained

  • 3 tins of chopped tomatoes (400g)

  • 8 sundried tomatoes, chopped

  • 1 yellow pepper, diced

  • 1 red pepper, diced

  • 80g black olives

  • 1 tbsp Spanish paprika

  • ½ tbsp chilli flakes

  • 1 tbsp garlic granules

  • ½ tbsp mixed herbs

  • 400g spinach

  •  Salt and pepper

  • 4 tsp olive oil

Instructions:

  1. Heat a frying pan with olive oil to a medium heat.

  2. Fry off chicken and chorizo until browned then add to slow cooker.

  3. Put the spices, herbs, beans, brown rice, sundried tomatoes, peppers, chopped tomatoes and olives into the slow cooker with 200ml water.

  4. Cook on low for 5-6 hours.

  5. Add spinach 30 minutes before serving and turn up to a medium heat.

  6. Freeze for up to three months for an easy food prep.
