Sausage and Bean Casserole (HC)

Ingredients

  • 1 x teaspoon olive oil

  • ½ onion

  • ¼ stick of celery

  • 4 slices of yellow pepper

  • 4 slices of red pepper

  • 30g chorizo

  • 2 pork sausages

  • ½ clove of garlic

  • ½ teaspoon of smoked paprika

  • ½ teaspoon of cumin seeds, whole or ground

  • ½ teaspoon of thyme

  • 200g tomatoes, canned

  • ½ stock cube, low sodium

  • 172g cannellini beans, canned

  • Sprinkle black pepper

Instructions:

  1. Heat olive oil in a pot. 

  2. Add chopped onion and cook gently for 5 minutes. 

  3. Add finely chopped celery, yellow pepper, red pepper and cook for a further 5 mins. 

  4. Add the chorizo and sausages, fry for 5 minutes. 

  5. Stir in garlic, smoked paprika, cumin and thyme then continue cooking for 1 – 2 min. 

  6. Add tinned tomatoes and bring to a simmer. Crumble in the chicken stock cube and stir. 

  7. Cook for 40 minutes. Stir in drained and rinsed cannellini beans and cook for a further five minutes. 

  8. Taste test, season with black pepper and add any additional seasoning if you need it.

  9. Serve with salad or vegetables.
