Lemon and Blueberry Overnight Oats

Ingredients

  • 40g (½ cup) (1½ oz) porridge oats

  • 125ml (½ cup) (4½ fl oz) semi-skimmed milk (or preferred choice)

  • 1 tsp honey

  • 1 tsp lemon juice

  • 1 tsp lemon zest

  • 1 tsp chia seeds

  • 1 tbsp (0.75 Aus tbsp – 15ml) full-fat Greek yoghurt

  • 10 blueberries

Instructions:

  1. Place all the ingredients except the blueberries in a container and stir well.

  2. Cover with a lid and place in the fridge overnight.

  3. To serve, take the overnight oats out of the fridge and top with blueberries.

Top Tip

Advance prep – make the night before.
