Green Tuna Goddess Bowl (LC)

Ingredients

  • 70g or 1 small tinned tuna, drained

  • 1 small red onion, finely diced

  • Sprinkle of black pepper (optional)

  • 6 cherry tomatoes, sliced

  • ½ cucumber, sliced

  • ½ red pepper, sliced

  • 1 small carrot, grated

  • Handful of fresh spinach

Sauce:

  • ½ large avocado

  • Handful of parsley

  • 1 tsp mayonnaise

  • 1 tbsp full-fat Greek yoghurt

  • 1 tbsp lemon juice

  • Salt and black pepper to taste

  • Pinch of dried garlic

  • Pinch of dried onion powder

  • ½ tsp Italian herbs

  • 4 tbsp water

Instructions:

  1. To make the sauce, add the sauce ingredients into a blender and blitz until smooth.

  2. In a bowl, mix the drained tuna with the red onion. Season the tuna with black pepper if desired.

  3. Add the tomatoes, cucumber, red pepper, carrot and spinach to a bowl.

  4. Add the tuna mixture, drizzle over the sauce and enjoy.
