Greek Lamb Pizza (HC) 

Ingredients

  • 1 tsp olive oil

  • ½ garlic clove, crushed

  • 85g lean lamb mince

  • Salt and ground black pepper

  • 1 wholemeal pitta bread

  • 40g tomato passata

  • 1 large handful of baby spinach ¼ red onion, thinly sliced

  • 5 cherry tomatoes, halved

  • 4 olives, pitted and sliced

  • 15g feta cheese, crumbled

Yoghurt Dressing:

  • 50g yoghurt

  • ¼ garlic clove, crushed 

  • Lemon juice to taste

Instructions:

  1. Preheat the oven to 160-degrees fan and line a baking tray.

  2. Heat a non-stick frying pan and add the oil. Add the garlic and lamb mince and cook for 5-7 minutes or until browned, stirring frequently with a wooden spoon to break the mince up. Season with salt and black pepper. Drain off any excess liquid.

  3. Lay the pita bread into the baking tray and spread over the passata. Then scatter the spinach, cooked lamb mix, onion, tomato, olives, and feta.

  4. Place the pizza in the oven for 8-10 minutes or until the toppings are hot.

  5. Meanwhile, to make the yoghurt sauce, whisk the yoghurt, garlic, and lemon juice together in a small bowl.

  6. To serve, top the pizza with the yoghurt dressing.

Recipe Adjustment
