Greek Couscous and Halloumi (HC)

Ingredients

  • ½ red pepper

  • ½ onion

  • 4 mushrooms

  • 1 teaspoon olive oil

  • 80g spinach leaves

  • 70g green beans

  • 70g Halloumi

  • 40g couscous

  • 1 teaspoon dill

  • 1 teaspoon oregano

  • 1 tablespoon lemon juice

  • 30g feta

  • 1 tablespoon hummus

Instructions:

  1. Turn on the grill.

  2. Add the peppers, onion and mushrooms to a frying pan with a little olive oil and allow to cook for 10 mins or so.

  3. Add spinach near the end of cooking time, just enough to wilt.

  4. Boil some green beans.

  5. Slice halloumi and place under the grill, grill for around 3 minutes on each side. Keep

    checking in case it burns.

  6. Prepare couscous according to the instructions on the pack.

  7. When couscous is ready add some dill, oregano, lemon juice and feta.

  8. Mix around.

  9. When green beans and veg are ready add to the couscous.

  10. Mix around, place halloumi on the side and serve with hummus.
