Greek Chicken and Couscous (HC)
Ingredients
1 chicken fillet, cut into chunks
½ red pepper (bell pepper), diced
½ onion, diced
4 mushrooms, sliced
1 tsp olive oil
1 cereal bowl spinach leaves
70g (¾ cup) (2½ oz) green beans
40g (¼ cup) (1½ oz) couscous
1 tsp dill
1 tsp oregano
1 tbsp (0.75 Aus tbsp – 15ml) lemon juice
30g (¼ cup) (1 oz) feta cheese
1 tbsp (0.75 Aus tbsp – 15ml) hummus
Instructions:
Add the chicken, pepper (bell pepper), onion and mushrooms to a frying pan with a little olive oil and allow to cook for 10 minutes or so. Add spinach near the end of cooking time, just enough to wilt.
Boil some green beans.
Prepare couscous according to the instructions on the pack.
When couscous is ready add some dill, oregano, lemon juice and feta.
Mix around.
When green beans, chicken and veg are ready add to the couscous.
Mix around and serve with hummus
