Chickpea Salad (MC)

Ingredients

  • ½ tsp mixed herbs

  • ½ red onion

  • 6 cherry tomatoes

  • 30g (¼ cup) (1 oz) feta cheese

  • 1 tsp olive oil

  • 3 tbsp (2.25 Aus tbsp – 45ml) chickpeas (garbanzo beans)

  • 30g (1 cup) (1 oz) spinach leaves

Instructions:

  1. In a bowl add the herbs, sliced onion, tomatoes, feta, olive oil, chickpeas (garbanzo beans) and spinach. 

  2. Season and add any extra seasoning needed.
