Chickpea and Spinach Pasta (HC)

Ingredients

  • 60g (1 cup) (2 oz) pasta - wholewheat

  • 1 tsp olive oil

  • ½ clove garlic, crushed

  • ½ onion, finely diced

  • 1 tsp mixed herbs

  • ½ red pepper (bell pepper)

  • ½ tin chopped tomatoes

  • Black pepper

  • 3 tbsp (2.25 Aus tbsp – 45ml) chickpeas (garbanzo beans)

  • 1 cereal bowl spinach leaves

  • 30g (⅓ cup) (1 oz) cheddar cheese

Instructions:

  1. Cook the pasta according to instructions on the pack.

  2. Heat the oil in a pan. Add in the garlic, onion and herbs, and cook for 2-3 minutes, until softened. Next, add in the chopped pepper (bell pepper) and tinned tomatoes.

  3. Add in a splash of water if necessary, to avoid burning, and season with pepper.

  4. Once pasta is cooked, add it to the pan and combine. Add in the chickpeas (garbanzo beans). Next, add in the spinach and cook for another 2- 3 minutes until wilted.

  5. Finally, serve with some grated cheese on top.
