Chicken Waldorf Salad (LC)
Ingredients
50g (1¾ oz) chicken, cooked and shredded or chopped
1½ celery stalks, chopped
½ apple, peeled, deseeded, chopped
20g (⅛ cup)(¾ oz) raisins
15g (2 tbsp)(½ oz) walnuts, chopped (1.5 Aus tbsp -30ml)
1 tsp mayonnaise
1 tsp natural yoghurt
1 tsp lemon juice
45g (2 cups)(1½ oz) mixed salad leaves
salt and black pepper to taste
Instructions:
Place the chicken, chopped celery and apple, raisins, and walnuts in a bowl. Add in the mayonnaise, yoghurt and lemon juice, season with salt and black pepper and mix well.
Place the salad leaves into a bowl and top with the filling. Served with freshly ground black pepper.
