Chicken Waldorf Salad (LC)

Ingredients

  • 50g (1¾ oz) chicken, cooked and shredded or chopped

  • 1½ celery stalks, chopped

  • ½ apple, peeled, deseeded, chopped

  • 20g (⅛ cup)(¾ oz) raisins

  • 15g (2 tbsp)(½ oz) walnuts, chopped (1.5 Aus tbsp -30ml)

  • 1 tsp mayonnaise

  • 1 tsp natural yoghurt

  • 1 tsp lemon juice

  • 45g (2 cups)(1½ oz) mixed salad leaves 

  • salt and black pepper to taste

Instructions:

  1. Place the chicken, chopped celery and apple, raisins, and walnuts in a bowl. Add in the mayonnaise, yoghurt and lemon juice, season with salt and black pepper and mix well.

  2. Place the salad leaves into a bowl and top with the filling. Served with freshly ground black pepper.
