Chicken Arrabiata (HC)
Ingredients
60g (1 cup)(2 oz) wholegrain pasta
1 tsp olive oil
½ clove of garlic
1 small onion
100g (1 cup)(3½ oz) chopped mushrooms
1 chicken fillet, chopped
200g (1 cup)(7 oz) tinned tomatoes
Few leaves of thyme, or dried
Few leaves of basil, or dried
Few leaves of oregano or dried
½ red chilli pepper
6 olives
Small handful of Parmesan cheese
Instructions:
Cook pasta according to packet instructions.
In a frying pan add your olive oil and sauté garlic, onions, mushrooms and chicken.
Add tinned tomatoes or you can use chopped fresh tomatoes.
Season with thyme, basil and oregano and chilli pepper.
Allow to simmer.
Pour sauce over pasta, toss a few olives on top and a sprinkle of parmesan.
