Chicken Arrabiata (HC)
Ingredients
- 60g wholegrain pasta
- 1 tsp olive oil
- ½ clove of garlic
- 1 small onion
- 100g chopped mushrooms
- 1 chicken fillet, chopped
- 200g tinned tomatoes
- Few leaves of thyme, or dried
- Few leaves of basil, or dried
- Few leaves of oregano or dried
- ½ red chilli pepper
- 6 olives
- Small handful of Parmesan cheese
Instructions:
- Cook pasta according to packet instructions. 
- In a frying pan add your olive oil and sauté garlic, onions, mushrooms and chicken. 
- Add tinned tomatoes or you can use chopped fresh tomatoes. 
- Season with thyme, basil and oregano and chilli pepper. 
- Allow to simmer. 
- Pour sauce over pasta, toss a few olives on top and a sprinkle of parmesan.
