Chicken and Courgette Noodles (HC) 

Ingredients

  • 50g (¾ cup) (1¾ oz) wholewheat noodles 

  • 2 tbsp (1.5 Aus tbsp – 30ml) soy sauce, reduced sodium

  • 1 tsp cornflour (corn starch)

  • ½ tsp ground ginger

  • ½ clove garlic, crushed 

  • 1 tsp olive oil 

  • 1 small chicken fillet

  • ½ onion, sliced 

  • 80g (½ cup) (2¾ oz) courgette (zucchini)

  • Black pepper

  • ½ stock cubes, low sodium 

  • 1 tbsp (0.75 Aus tbsp – 15ml) sesame seeds

Instructions:

  1. Cook the noodles according to the instructions on the pack.

  2. In a large bowl add the soy sauce, corn flour, ginger and garlic and whisk until everything is completely dissolved.

  3. In a frying pan, add a little olive oil, the sliced chicken fillet and onion. Sauté for around 3-4 minutes.

  4. Now add in the courgette (zucchini) and continue to cook on a medium heat for another 5 or so minutes.

  5. Season with pepper then add in the sauce mixture.

  6. Take the stock cube and crush, adding to chicken and courgette (zucchini).

  7. Mix around.

  8. After a few minutes toss in some sesame seeds, taste test and add more seasoning if needed.

  9. Serve chicken and courgette (zucchini) on a bed of noodles.
