Chicken and Courgette Noodles (HC)
Ingredients
50g (¾ cup) (1¾ oz) wholewheat noodles
2 tbsp (1.5 Aus tbsp – 30ml) soy sauce, reduced sodium
1 tsp cornflour (corn starch)
½ tsp ground ginger
½ clove garlic, crushed
1 tsp olive oil
1 small chicken fillet
½ onion, sliced
80g (½ cup) (2¾ oz) courgette (zucchini)
Black pepper
½ stock cubes, low sodium
1 tbsp (0.75 Aus tbsp – 15ml) sesame seeds
Instructions:
Cook the noodles according to the instructions on the pack.
In a large bowl add the soy sauce, corn flour, ginger and garlic and whisk until everything is completely dissolved.
In a frying pan, add a little olive oil, the sliced chicken fillet and onion. Sauté for around 3-4 minutes.
Now add in the courgette (zucchini) and continue to cook on a medium heat for another 5 or so minutes.
Season with pepper then add in the sauce mixture.
Take the stock cube and crush, adding to chicken and courgette (zucchini).
Mix around.
After a few minutes toss in some sesame seeds, taste test and add more seasoning if needed.
Serve chicken and courgette (zucchini) on a bed of noodles.
