Beef Stir Fry (HC)

Ingredients

  • 60g brown rice

  • 2 tsp sesame oil

  • 100g lean beef strips

  • ½ onion, sliced

  • ½ red pepper, seeds removed and thinly

  • sliced

  • 30g baby corn

  • 65g broccoli, sliced

  • 1 garlic clove, crushed

  • 1.5 tbsp oyster sauce

  • 1.5 tbsp reduced salt tamari or soy sauce

  • 1 tsp sesame seeds

Instructions:

  1. Cook the rice as per the packet instructions and set a side.

  2. Meanwhile, heat a large wok or frying pan over a high heat and add 1 tsp of the oil.

  3. Add the beef strips and stir fry for 1-2 minutes or until browned and just cooked.

  4. Transfer to a plate.

  5. Put the remaining oil in the pan and add the onion, pepper, baby corn, broccoli and garlic and stir fry for 2 minutes. Add 2 tsp of water if needed.

  6. Add the oyster sauce and tamari or soy sauce and toss until well combined.

  7. Add the sesame seeds and the cooked beef strips and stir fry everything for 1 minute until heated through.
