Avocado and Tuna Layered Salad (LC)
Ingredients
70g (2½ oz) canned tuna in brine, drained
1 tsp mayonnaise
1 tsp coriander (cilantro), chopped
½ lime, juiced
Salt and black pepper to taste
½ avocado
1 tomato, finely chopped
Instructions:
In a bowl, mix tuna, mayonnaise, coriander (cilantro) and dash of lime juice.
Season with salt and black pepper to taste.
Chop the flesh of the avocado and place in a bowl.
Drizzle it with the remaining lime juice — season with salt and pepper.
On a plate, layer the salad with the avocado, then the tuna and finish with a layer of finely chopped tomato.
