Avocado and Tuna Layered Salad (LC)

Ingredients

  • 70g (2½ oz) canned tuna in brine, drained

  • 1 tsp mayonnaise

  • 1 tsp coriander (cilantro), chopped

  • ½ lime, juiced

  • Salt and black pepper to taste

  • ½ avocado

  • 1 tomato, finely chopped

Instructions:

  1. In a bowl, mix tuna, mayonnaise, coriander (cilantro) and dash of lime juice. 

  2. Season with salt and black pepper to taste.

  3. Chop the flesh of the avocado and place in a bowl. 

  4. Drizzle it with the remaining lime juice — season with salt and pepper.

  5. On a plate, layer the salad with the avocado, then the tuna and finish with a layer of finely chopped tomato.
