3 Ingredient Pancakes

Ingredients

  • 1 banana

  • 2 eggs

  • 1 tsp cinnamon

  • 1 tsp unsalted butter

Instructions:

  1. Add the banana, eggs and cinnamon into a food processor and blend until smooth (the mixture won’t be a thick batter like regular pancake batter).Put a small frying pan on medium heat and melt some butter (around ½ tsp for each pancake) in the pan.

  2. When the butter starts bubbling, add half of the mixture into the pan, the whole surface should be covered with a thin layer of pancake mixture.

  3. Let it sit for about 1-2 minutes, or when you see bubbles flip it over and do the same on the other side.

  4. Pop onto a plate when ready.

  5. Repeat the process with the remaining mixture (mixture should make 2 pancakes).

  6. Whenever both pancakes are ready, serve them as they are or add some sliced fresh fruit as a topping if you desire. Thin spread of peanut butter is also nice.

Top Tip

Make fresh each time, as will go soggy
