Avocado & Tuna Salad

Lunch

Serves: 2

Ingredients:

  • 2x 5oz. (145g) can tuna, in brine, drained

  • ½ apple, diced

  • 1 stalk celery, sliced

  • ½ red onion, diced

  • 1 avocado, cubed

  • ½ lemon, juice only

  • salt and pepper to taste

Instructions:

  1. Combine all of the ingredients in a bowl and mix gently, season to taste with salt and pepper.

  2. Serve on a piece of toast, as a filling or on its own.
