Cottage Cheese Wrap
Ingredients:
250g cottage cheese
1 medium egg
Pinch of black pepper
¼ tsp Italian seasoning
¼ tsp olive oil
Fillings (optional):
1 tomato, sliced
¼ cucumber, sliced
1 tsp balsamic vinegar
1 large handful of mixed salad leaves
Instructions:
Preheat your oven to 180°C (fan 160°C) or Gas Mark 4.
Add the cottage cheese, egg, black pepper and Italian seasoning to a small food processor or blender. Blend until smooth.
Line a small baking tray (approximately 33cm x 23cm) with baking or parchment paper and brush with a little oil.
Pour the batter onto the tray and spread it out evenly into a thin layer, ensuring the parchment is fully covered but not visible through the batter.
Place the tray in the oven and bake for 25-35 minutes. The exact time may vary depending on your oven. The wrap is ready when the top is golden brown and soft to the touch, and it lifts easily from the parchment.
Allow the wrap to cool for about 5 minutes. Then, add your favourite fillings.
Carefully roll the filled wrap and serve immediately. Enjoy your homemade cottage cheese wrap!
