Slow Cooker Peppered Beef

Ingredients:

  • 200ml hot water

  • 1 beef stock cube (low sodium)

  • 2 tbsp soy sauce

  • 2 tbsp Worcestershire sauce

  • 1 tbsp honey

  • ½ tsp ground ginger

  • 1 garlic clove, minced (or 1 tsp garlic powder)

  • ½ tsp paprika

  • 1 tsp cornstarch

  • Pinch of black pepper 

  • 220g beef sirloin strips (approx.)

  • 1 onion, sliced

  • 1 pepper, sliced

  • 240-280g broccoli, cut into florets

  • Choice of carbohydrate from the swap list

Instructions:

  1. In a small bowl or jug, mix the hot water, stock cube, soy sauce, Worcestershire sauce, honey, ground ginger, garlic, paprika, cornstarch and black pepper. Stir well to dissolve the stock cube and cornstarch.

  2. Place the beef strips into the slow cooker. Pour the prepared sauce over the beef. Add the onion and stir to combine.

  3. Set the slow cooker on low for 6 hours or high for 3 hours.

  4. Add the peppers and broccoli to the slow cooker during the final hour of cooking.

  5. Once the cooking time is complete, give everything a good stir. 

  6. Taste test and add more seasoning if required.

  7. Serve over rice, noodles, or potatoes, selecting the portion size from the swap list.

    Want to make the recipe vegetarian? 

    Remove the beef and add 3 tbsp of chickpeas / mixed beans or any vegetarian alternative using the food swap list.
