Apple Pie Blended Chia Pudding
Ingredients:
1 apple, peeled, cored, and chopped into bite-sized pieces
1 tsp honey (or maple syrup)
½ tsp ground cinnamon
1 tbsp water
70ml milk (of your choice)
75g full-fat Greek yoghurt
1 tsp lemon juice
1 ½ tbsp chia seeds
10g walnuts, chopped
1 tbsp sultanas
Instructions:
In a small pan, add the chopped apple pieces, ½ tsp of honey, ¼ tsp of cinnamon and water.
Cook over medium heat for 5-7 minutes, stirring occasionally, until the apples are soft and slightly caramelised. Set aside to cool.
Add the milk, Greek yoghurt, lemon juice, chia seeds, half of the cooked apples (pop the remaining apples in a container in the fridge for tomorrow), the remaining cinnamon and honey to a blender.
Blitz until smooth and creamy.
Pour the blended mixture into a jar or container.
Pop it into the fridge and let it sit overnight.
In the morning, stir the mixture well, then top it with the remaining chopped apple pieces, walnuts and sultanas.
