Leftover Turkey Salad

Ingredients:

  • 130g cooked turkey, chopped

  • ½ celery stick, thinly sliced

  • 1–2 spring onions, thinly sliced

  • 1 tbsp dried cranberries

  • 30g pecans, chopped

  • Black pepper (season)

  • 1 heaped tsp full-fat mayonnaise

  • 1 heaped tbsp full-fat Greek yoghurt

  • 1 tsp Dijon mustard

  • 1 tsp water

  • A handful of any salad leaves 

  • 1 tbsp parsley [optional]

Instructions:

  1. In a large mixing bowl, combine the turkey, celery, spring onions, cranberries and pecans. Season with black pepper and mix together.

  2. In a separate bowl, add the mayonnaise, Greek yoghurt, mustard, and water then mix together.

  3. Add the dressing to the turkey mixture, mix until all ingredients are evenly coated with the dressing. 

  4. Taste test and add more seasoning if necessary. 

  5. Serve on a bed of salad leaves and top with fresh parsley (optional)
